There's nothing I'd rather do on a rainy day than bake!If the weather is not going to bring the sunshine, I might as well do it myself with what I call my Cabana Boys!
A true representation of any sunny island, these chocolate-coconut cupcakes bring with them the feeling of being on a beach when you eat them.
All you need is a pina colada and a real cabana boy to bring them over, and you're all set! (Anyone have one of those?)
As a special punch of flavour, I toasted the coconut on top and doing this really brings out its nutty flavour!
